Unreal Corn’d Beef, 3-4 oz thin sliced
Rye bread (or bread of choice)
Swiss or Provolone cheese (try plant-based Violife brand)
Russian or Thousand Island Dressing (easily veganized with eggless mayo)
Optional: Sautéed Onions, Pickles
HEAT A SKILLET OVER MEDIUM HEAT, SPRAYED WITH OIL.
Place the Corn’d Beef in one thick stack as it’ll go on the sandwich with the cheese ontop. Cover with a lid and apply a couple drops of water to the pan to MELT THE CHEESE (quickly please, don't overheat the meat).
(alternatively you can toast the bread and then melt the cheese in 45 seconds in the microwave on one slice)
Add dressing, sauerkraut and sautéed onions if you’re really fancy.
Serve with additional dressing for dipping and a pickle on the side!
